Breakfast Recipes

To help with breakfast inspiration and just when you need to find something healthy and simple for your family.

Granola

Ingredients

  • 1-2 cups Oats*

  • 1/3 cup Honey**

  • 2-3 Tbsp coconut oil, melted

  • 2 Tbsp Chia seeds

  • 1/2 cup almonds chopped***

  • 1/2 cup cashews chopped***

  • 1 cup dates chopped

  • 1 cup dried fruits****

  • 1/2 cup protein powder (optional)

  • 1 tsp salt

  • 1 tsp vanilla 

  • 1 tsp ground cinnamon
     

Method

  • Preheat the oven to 180°C (350°F). Line baking tray with baking paper

  • Melt you coconut oil and set aside

  • Chop all your fruit and nuts to the size of your liking

  • Place all dry ingredients, nuts and dried fruit included in a bowl until all ingredients are incorporated. 

  • Add the protein powder and ensure all nuts and dried fruit is coated

  • Next add wet ingredients, honey, vanilla and coconut oil and mix well

  • Dump granola into your baking tray and evenly spread it out and place into the preheated oven

  • Bake for 20-30mins stirring every 5mins to ensure it doesn't burn

  • Let the bread cool and then you can transfer and store in an air tight jar 

  • Serve with milk or yoghurt and enjoy!

Notes:

*Oats - you can substitute for quinoa flakes

**Honey - you can substitute for maple syrup, agave syrup or rice malt syrup

***Nuts - You can definitely use any kind of nuts you like or even substitute for seeds if you can't have nuts

****Dried fruit - You can definitely use any kind of dried fruit you like eg. dried cranberries

Healthy Pancakes

Delicious healthy pancakes that are easy and are free from refined sugar

This is a recipe I made up after looking for the perfect pancake recipe and just not finding what I was after. All the pancake recipes I found, all had sugar in them or just didnt come out tasting nice. So after plenty of research and baking, I finally come out with a pancake recipe that is healthier, easy and really tasty. You can also make this into any flavour you want, you can add choc chips, blueberries, cinnamon or any fruits and spices you like. They can be versatile, so you can enjoy them just the way you like.

Healthy Pancakes

Ingredients

  • 3 ripe bananas

  • 2 eggs

  • 1Tblsp vanilla

  • 2Tblsp oil (I use extra virgin olive oil or you can use coconut oil)

  • 2Tblsp honey

  • 2 cups all purpose flour (or gluten free flour)

  • 1 1/2 - 2 cups milk (or nut milk)

  • 1/2 cup chocolate chips or chunks** optional

 

 

Directions

  1. In a large bowl, mash the bananas

  2. To the bowl, add all the wet ingredients: vanilla, honey, oil and eggs and mix until well incorporated

  3. Next add the flour and give it a little mix

  4. Finally slowly start adding in your milk, a little bit at a time until you get the consistancy you like your pancake batter to be

  5. Once you have got your desired consistancy, now is the time to add your flavoured extras. We often add in choc chips or blueberries for the kids, but they are tasty with or without added extras

  6. Using a griddle or fry pan, heat it up on the stove, melt some butter to avoid sticking and pour batter to how ever big you like them

  7. Serve on a plate with your favourite toppings

**This recipe feeds our family of 5 with extras we like to keep in the freezer for a later date or snacks for the kids.
